Cheese toast served with a side of tomato soup. Also known as cheese-on-toast, these two go hand-in-hand together, and, truth told, I enjoy dipping this munchy-crunchy oven-toasted side-dish into my creamy-steamy soup better than the overwhelming favorite amongst the masses: the slightly-greasy skillet-fried grilled cheese sandwich (served with a side of tomato soup). When the Christmas and New Year holidays roll around, depending on who's coming to breakfast, lunch or dinner, my menus vary from year-to-year. That said, eggnog is a constant, a staple in my refrigerator, and it's offered to guests at any time of day. I declare: I love briny tapenade in an omelete. Throw in a few salty crumbles of feta cheese, place it on a bed of bright green baby arugula or baby spinach leaves and garnish with a few diced tomatoes -- what's not to love. Once a year, the day after Eastern European Orthodox Easter to be specific, my mother made one of my favorite breakfasts: savory French toast. Sausage, egg and cheese bagel sandwiches are my specialty. I make ten of them every Sunday, wrap 'em in plastic and stack 'em in the refrigerator. Monday thru Friday (the work week), these ten tasty sandwiches are breakfast for my husband and myself.
